I hate the notion of a ”secret” recipe…. Ain’t no secrets here 🙂

”Keto cheesecake”
1 cup almond flour
150 g melted butter
2 Tbs sweetener
2 packs Philadelphia cream cheese (300 g)
2 large eggs at room temperature
1 cup Greek yogurt
1/2 cup sweetener, or 30 drops liquid stevia
2 Tbs vanilla extract
200 g blackberries, raspberries or strawberries (any berries keto friendly that you prefer)
1 Tbs vanilla extract
10 drops of stevia
1 Tbs gelatin
100 ml water

Start with choosing your cake pan, I used 30 cm disposable one with removable bottom.
Preheat the oven at 180 Celsius.
Melt the butter and combine it with almond flower and sweetener. Move it to the cake pan and press hard on the bottom creating thin crust, transfer to oven and bake for 10 minutes, once done let it cool for 10 more minutes and lower the oven heat to 150 Celsius.
While your crust is baking, start preparing the cheese filling. In a large bowl place your cream cheese and bit it with mixer until smooth. Add yogurt and stevia, beet it for 1 more minute, start adding eggs one by one, beating them on a low speed for about minute each. Before transferring it onto crust try if it requires more stevia, taste is individual thing, and with sweetener you never know.
What I like to do before placing it in the oven, I add few blackberries to the filling before baking and gently press in butter. Now it’s ready for baking, bake it 45-60 minutes on 150 Celsius, when baked, leave it inside of the oven 1 more hour to cool down, so that you will avoid cake ”braking”.
Transfer onto room temperature and cool completely before placing in fridge.
While our cake is cooling we can prepare garnish.
Prepare gelatin as per instructions, an set aside.
In a small pot combine fruits, water and sweetener, bring to a boil and saute until water is half way gone. Move away from the heat and add gelatin.
Before transferring your cake into fridge drizzle with fruit made garnish and leave it to cool down before serving.

”Sour cream cherry cake”
2 packs of Lady fingers (400 g)
500 g cherries (fresh or frozen)
500 ml sour cream (originally I would use ”pavlaka” or ”smetana”)
100 g white sugar
200 ml milk
250 g whipping cream
chocolate shavings for decoration

Transfer sour cream to a large bowl, add sugar to it and stir slowly until sugar is incorporated. Set aside for 15 minutes.
Prepare a serving plate and toss on it a pinch of sugar so that lady fingers won’t stick.
Pour the milk into a bowl and dip in every lady finger before placing on a serving plate.Make 2 rows of it until you finish the 1 whole package. Other one leave for the next row.
Add half of sour cream onto lady fingers that you assemble, on top of it add cherries and squeeze carefully. Once the cherries are placed, repeat the process with lady fingers and so on.
When you are done with assemble transfer the cake to a fridge overnight.
The next day add whipping cream on top of the cake and add decoration.
Amazing how easy and refreshing this cake is.
